If you missed out on Mardi Gras in the Big Easy this year, never fear. There’s still time to   get your fix. Central Florida has its own Mardi Gras, thanks to Universal Orlando. My favorite part, beyond the beads and the parade, is the music. Each Saturday night, and some Friday nights, through April 20, there is a concert. There are 14 nights of performances total, including big names like Matchbox Twenty (performing March 16), the four-time Grammy nominated band that got its in Orlando. (More performances are listed below.) Right before the concerts an over-the-top parade comes through the park with hand-crafted floats, candy-colored costumes and beads, of course. If you’re lucky, you may even be chosen as the king or queen of Mardi Gras. Plus, if you head to the French Quarter Courtyard, you’ll hear blues, jazz and zydeco tunes. And no Mardi Gras would be complete without some Cajun cuisine. You’ll find all the classics -- jambalaya, beignets, gumbo, Po Boy sandwiches and more. (Speaking of food, I’ve include a video below about how to make your own jambalaya.) Enjoy! If you go: Mardi Gras is included with regular admission to Universal Studios. Florida residents can snag a special discount and save more than $30 when buying multi-day tickets.
